Sacher Cake Recipe
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 7 oz dark chocolate, chopped
- 1/2 cup unsalted butter, room temperature
- 6 large eggs, separated
- 1 tsp vanilla extract
- 1/2 cup apricot jam
- 1/2 cup heavy cream
- 8 oz dark chocolate, for the glaze
Preparation Method
- Preheat your oven to 350°F (175°C). Grease and line the bottom of a 9-inch springform pan with parchment paper.
- Melt the 7 oz of dark chocolate over a double boiler or in the microwave. Set aside to cool slightly.
- In a large bowl, beat the butter and half of the sugar until light and fluffy. Add the egg yolks one at a time, beating well after each addition. Mix in the melted chocolate and vanilla extract.
- In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar, beating until stiff peaks form. Gently fold the egg whites into the chocolate mixture.
- Sift the flour over the batter and fold in gently until just combined. Pour the batter into the prepared pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Once the cake is cooled, cut it in half horizontally. Spread the apricot jam over the bottom half, then replace the top half.
- For the glaze, heat the cream until just simmering, then pour over the chopped chocolate. Stir until smooth and glossy. Pour the glaze over the cake, letting it drip down the sides.
- Allow the glaze to set before serving. Enjoy your homemade Sacher Cake!
